Prosciutto e Melone

A rich chicken appetizer that is both sweet and sour.

Ingredients:

12 ounces chicken breast
2/3 cup raisins
3 slices lemon
6 tablespoons extra virgin olive oil
1 1/2 teaspoon white wine vinegar
1 1/2 tablespoon fresh parsley, chopped finely
fresh baby lettuce

Procedure:

In a small pan, arrange chicken, lemon slices, raisins, and add 3 tablespoons olive oil, salt, and enough water to cover everything. Bring the water to a boil. Then lower the flame and simmer for 20 to 30 minutes. When chicken is tender, remove it from the broth and let cool. Remove the lemon slices and continue simmering the broth until thicker. When chicken is cool, shred it into pieces by your hands. Put them in a salad bowl with the raisins. Add 1/4 cup of the broth, 3 tablespoons olive oil, vinegar, and parsley. Season with salt, mix well, and chill in the refrigerator. Serve this chicken appetizer on a bed of lettuce.
